This crunchy umami-bomb cucumber salad is perfectly balanced between spicy Kelp Chili Crisp and cooling cottage cheese. 


  • 1 cucumber
  • 1 tsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 Tbsp Kelp Chili Crisp
  • 1 Tbsp Furikake Kelp Seasoning
  • 1 cup cottage cheese
  • A few sprigs fresh cilantro to garnish
  • Flaky sea salt to taste


  1. Cut cucumber into 1 inch long sticks, or whatever shape you prefer.
  2. Toss cucumbers in a small bowl with rice vinegar, sesame oil + salt.
  3. In a serving bowl, assemble with a layer of cottage cheese, topped by cucumber salad.
  4. Garnish with fresh cilantro, Kelp Chili Crisp and Furikake Kelp Seasoning.
  5. Enjoy immediately.
