This crunchy umami-bomb cucumber salad is perfectly balanced between spicy Kelp Chili Crisp and cooling cottage cheese.
Ingredients
- 1 cucumber
- 1 tsp rice vinegar
- 1 tsp toasted sesame oil
- 1 Tbsp Kelp Chili Crisp
- 1 Tbsp Furikake Kelp Seasoning
- 1 cup cottage cheese
- A few sprigs fresh cilantro to garnish
- Flaky sea salt to taste
Preparations
- Cut cucumber into 1 inch long sticks, or whatever shape you prefer.
- Toss cucumbers in a small bowl with rice vinegar, sesame oil + salt.
- In a serving bowl, assemble with a layer of cottage cheese, topped by cucumber salad.
- Garnish with fresh cilantro, Kelp Chili Crisp and Furikake Kelp Seasoning.
