Ingredients
- 2 cucumbers, peeled + chopped
- 2 scallions
- 1.5 cups greek yogurt
- 2 cups fresh herbs like cilantro, basil + parsley
- 1 Tbsp Kelp Chili Crisp
- 1 Tbsp Everything Kelp Seasoning
- A few sprigs fresh herbs to garnish
- Olive oil to drizzle
- Sea salt to taste
Preparations
- In a blender combine cucumbers, scallions, greek yogurt, fresh herbs and salt.
- Blend until creamy smooth.
- Transfer to the refrigerator to chill for 1-2 hours.
- When ready to eat, garnish the gazpacho with more fresh herbs, a drizzle of olive oil, sliced cucumber, Everything Kelp Seasoning and Kelp Chili Crisp.
- Enjoy immediately.
